Pina Colada

A revisited version of the famous tropical Piña Colada cocktail, alcohol-free but full of flavour. This mocktail combines the warmth of GIMBER N°2 Brut ginger with the creaminess of coconut and the freshness of pineapple for an instant escape to the tropics.

Ingredients

  • 30 ml GIMBER N°2 Brut
  • 60 ml fresh pineapple juice (or 100% pure juice)
  • 40 ml coconut milk
  • 20 ml freshly squeezed lime juice
  • 20 ml cane sugar syrup
  • A few fresh mint leaves
  • Crushed ice (for the shaker)
  • Ice cubes (for serving)

Instructions

  1. Prepare your shaker: Fill it generously with crushed ice.
  2. Add the liquids: Pour in the following order: 30 ml GIMBER N°2 Brut, 60 ml pineapple juice, 40 ml coconut milk, 20 ml fresh lime juice and 20 ml cane sugar syrup.
  3. Shake vigorously: Close the shaker and shake vigorously for 15 seconds to emulsify the coconut milk.
  4. Strain and serve: Fill a straight glass with fresh ice cubes, then pour in the mocktail through a strainer (fine strainer).
  5. Garnish: Garnish with a few fresh mint leaves and, if desired, a pineapple wedge or lime slice.

GIMBER's tips

  • For a creamier texture: Use full-fat coconut milk rather than low-fat.
  • Granita version: Blend all the ingredients with crushed ice in a blender for a granita texture.
  • Pro tip: Refrigerate the coconut milk in advance for an even creamier result.
  • Balance of flavours: Adjust the syrup to your preference (more or less sweet).
  • Fresh juice: Freshly squeezed lime juice makes all the difference.
