Melt the butter and allow it to cool, then combine honey and GIMBER to create a sweet syrup.
Beat the eggs with the caster sugar and dark brown sugar until fluffy for an airy texture.
Sift flour and baking powder, add a pinch of salt, mix the dry ingredients into the beaten eggs and mix well with the butter and honey-GIMBER syrup before letting the batter rest overnight.
Spoon batter into madeleine moulds and bake for 5 minutes at 200°C, then reduce oven temperature to 170°C and bake for another 5 minutes until golden brown.
